Ingredient Highlight: QUINOA

Over the past 5 years or so quinoa has made a grand entrance into the food and nutrition scene. As a nutritionist, I’m not entirely sure how this superfood became the headline on every health magazine and food article, but I am happy it has!

So what's so special about this ingredient? Interestingly enough quinoa is not actually a grain, but a seed. Quinoa was originally grown by the Incas who use a natural fertilizer and special farming method that they believe give these tiny seeds their superpowers.

As mentioned above, quinoa is considered a superfood as it is one of few plants that contains a complete protein. This is incredible and very unique! What that means is it provides all essential amino acids that we need for good health. In 1 cup of quinoa there is 8 grams of protein... wow! Another great property of quinoa, is that it’s built like a grain but gluten-free.

Quinoa tip: These tiny seeds liked to be rinsed before cooking! Quinoa has a natural coating of saponins, a chemical compound that acts as a defense mechanism against microbes and fungi. If they don’t get rinsed they leave a soapy and bitter flavour that isn’t too pleasant! Best method: using a fine mesh strainer, rinse quinoa under cold water for 1 minute.
