January Beet Smoothie

We all do our best to eat well all year round, but if there's ever a month when you feel like eating extra fruit and veg, it's usually January. This powerful beet smoothie is quick to prep, quick to digest and offers your body valuable nutrients that are quick to absorb. Enjoy it with your breakfast alongside some Prima granola, yogurt, and coffee. Since it's all fruits and vegetables with a dose of healthy fat from the avocado, this smoothie works equally well before or after a long ride, run, ski, or tough workout. It tastes as good as it looks... and is absolutely jam-packed with nutrients. 

Ingredients:

1 cup water
½ avocado
2 celery stalks, roughly chopped
1 cup strawberries
1 apple, cored
1 small beet, roughly chopped
Juice of 1 lemon
4 ice cubes

Directions:

1. Add all ingredients into a high-speed* blender and blend on high until smooth.

* If your blender is of the low-speed variety, steam the chopped beet first for about 15 minutes using a small covered saucepan and 1/2" of water

Yield: 4 cups

Nutrition tip: Celery is one of the most ubiquitous vegetables, and tends to get overlooked for its nutrient density in favour of "trendier" vegetables. We all know it's low calorie, but it's also a great source of several key vitamins and minerals. Including celery in your diet - not just kale! - is a good example of one of the most important principles in good nutrition: variety.
